Small Business Spotlight: Hearth Artisan Bread

In Plymouth, the smell of freshly baked bread has been drawing locals through the doors of Hearth Artisan Bread for well over a decade. Behind the oven is baker and founder Peter Nyberg, whose decades of experience in artisan baking have shaped one of the area’s most beloved bakeries. What started as a conversation over coffee and a lifelong passion for bread has grown into a daily ritual for many in the community.

At Hearth, bread isn’t rushed. It’s crafted with patience, tradition, and a deep respect for the process. From naturally fermented sourdough to hand-shaped loaves, every item reflects a commitment to time-honored techniques and a genuine love for the craft. I recently had the chance to talk with Peter about the story behind Hearth, the dedication that goes into each loaf, and the community that has supported the bakery since its early days.

Life in Mass (LIM): How did Hearth Artisan Bread first come to life?

Peter Nyberg (PN): I have been in the artisan baking industry since the early 1990s, and have done everything from opening a small startup bakery to working in large corporate bakery settings. I had been thinking about opening another startup bakery later on in life as a retirement business. I was teaching at Johnson & Wales, and although I enjoyed it, I missed making bread. One day, I had coffee with a friend of mine. My friend asked, “how many loaves of bread can you make in a day?“ After 30 years of making bread, the answer was, “a lot.” I went home and sat down with my wife and discussed the logistics, ran some numbers and we decided to go for it.

LIM: For someone who has never visited before, how would you describe the experience of walking into your bakery?

PN: I would say you’re walking into something you don’t see every day in the United States. It’s a true artisan bakery where products are made by hand in house and baked every day. Visually you will see mounds of bread - as well as bagels, pastries and a whole variety of products in process with the shapers cutting and shaping bread 12 feet away. It’s not fancy, it’s about the product, and that’s what we all focus on every day. You will find regulars in line every day and if you say it’s your first time you will have customers instantly tell you what their favorites are.

LIM: Can you tell us about your process and what goes into your business each day?

PN: We hold to classic processes and techniques. Consistency is always a challenge when you are making everything from scratch. We continually review our current products to see how we can improve them, as well as create and test new products.

LIM: Are there any customer favorites that have become staples over the years?

PN: It’s hard to pinpoint just one!

LIM: What’s something about good artisanal bread that most people don’t realize?

PN: Process. The time and attention it takes to make one loaf of bread. Keeping a 35 year-old natural starter (levain) fed daily for all those years multiple times a day. Making one loaf of our sourdough takes four days. This includes preferments, mixing, timing, temperature, proofing, shaping, cutting and finally scoring at the oven. We also have to control ph levels and hydration.

LIM: What has been one of the most rewarding moments since opening your doors?

PN: Meeting so many great people who have become repeat customers. And meeting new people every day. Talking to customers who have been coming in since we opened in 2010 who have been on the journey with us. We are happy to be able to make things that people enjoy.

LIM: Running a bakery takes early mornings and long hours. What keeps you motivated?

PN: The smell of the breads right before taking them out of the oven. I love what I do! It’s a gift. As the saying goes, “if you love what you do, you will never work a day in your life.” I can honestly say that. I don’t go to work, I just go somewhere that I’m needed and truly enjoy being there. For me it’s fun.

LIM: How do you balance tradition with creativity when developing new products?

PN: Traditional techniques are the basis of creativity. Without a balance of traditional techniques and processes you cannot make great products. Creativity thrives within tradition.

LIM: Do you have a personal favorite item on the menu right now?

PN: They are all my favorite! It’s interesting because as a baker and a business owner, I’m constantly analyzing and determining whether our products need improvement, what we can do to make them better, can we improve on an item more? We have a responsibility to our customers to do our best every day.

LIM: How has being a Plymouth based business shaped your journey?

PN: Prior to opening Hearth in Plymouth, I had never opened or been part of a bakery in the suburbs. We started Hearth with wholesale as the retail exposure in the early years was not enough to sustain the business. It took a good 13 years of steady word of mouth (in the early days, we did not advertise) to become a viable business. I’ve never lived in a town the size of Plymouth where you regularly see people you know. Customers come into the bakery and you get to know them. We are proud to be a part of Plymouth and it feels great to be able to contribute to the community.

LIM: You’ve been baking all over. How is Plymouth a unique place to build a small business, versus say Vancouver or Dallas?

PN: Vancouver and Dallas are densely populated, with lots of foot traffic and a huge food scene. Plymouth is a smaller town. Word of mouth has been huge for us here. We are really fortunate to have so many wonderful customers.

LIM: What do you hope customers feel when they bring a loaf of Hearth bread to their own table?

PN: We hope that our customers love it, that they come back often and tell all their friends and family about us! We hope that our customers know how much we care about every single thing that we do and that we are honored that they take time out of their day to choose us! We are grateful.
